How to Make Carrot Cake Roll Making a homemade cake roll may look intimidating, but as a friend showed me over 20 years ago, it is actually very easy. The one challenge is rolling the cake, but I will walk you through that process below so you know exactly what to do! Spray the paper with non-stick cooking spray for extra protection against the cake sticking. Set this aside and move on to mixing up the cake.

Now you can add the dry mixture and stir well. Add the finely grated carrots and mix gently by hand. Be careful to not overmix the cake batter at this point! Once completely cooled, gently unroll the cake from the towel and make sure it is fully released on all sides from the towel. Dollop the frosting onto the inside of the cake roll, then very carefully roll the cake back up. Transfer the carrot cake roll to a serving dish, then cover it with plastic wrap and refrigerate for 30 minutes to set the filling.

Set aside for as soon as the cake is out of the oven. In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt and cinnamon. In a large mixing bowl or the bowl of a stand mixer, beat the eggs, sugar and vanilla for 1 minute at high speed. Add the vegetable oil and mix just until combined. Pour the dry mixture into the wet mixture and stir gently just until combined.
